Abstract

This work is dedicated to the use of infrared energy in the production of dry tomato products. We have developed a technological scheme for the production of dry tomato products; Have been established optimal modes of thermal processing (drying) of tomato raw material with infrared (IR) energy; The expediency and prospects of heat treatment (drying) of tomato raw materials in the field of infrared rays are substantiated.
